Here is a great vegetarian recipe!!! If your not getting enough protein as a vegetarian, this meal has lots of tofu which is filled with protein!!!! Even if you don't like tofu(i hate it)you won't be able to taste it!!!!!!!!!!!!


Zoey's Spinach Tofu Cheese Bake

INGREDIENTS:

1 small onion chopped
1 clove garlic minced
1 T olive or grapeseed oil
1 14 1/2 oz can diced tomatoes
1 t dried basil
8 oz drained tofu
2 cups cooked brown rice
10-12oz frozen chopped spinach, thawed and drained
1/2 cup shredded swiss cheese
1/2 t salt
1/4 t pepper

Preheat oven to 350.

1) Heat oil over medium heat and brown the onion and garlic.  about 5 minutes.
2) Add undrained tomatoes and basil. Bring to a boil and reduce heat . Simmer uncovered for 3 minutes.
3) In the meantime, blend tofu in a blender or food processor until smooth.  Add to tomato mixture.
4)  Stir in the cooked rice, spinach, half the swiss, salt and pepper.
5) Grease a 2 quart baking dish and pour the mixture in.
6) Bake uncovered at 350 for 30-40 minutes. sprinkle the rest of the cheese on top for the last 10 minutes.
